The Doctor would bond with the whole team. He's made his peace with/bonded with Jack and the team would be, to him, a part of Jack. Ianto would bond with the Doctor because who wouldn't? And also because he would sense an odd kinship with him. He knows that Torchwood's policy against the Doctor was a lie and I think by now he's over Jack's running off in search of, so the remaining option is to bond. Besides, they could compare emo moments from Canary Wharf, something Ianto can't do with anyone else.

That's my take on Ianto meeting the Doctor too. There would probably be eyerolling and snarky comments (c'mon it's Ianto), but I think they'd get along great.
