Re 5. To be fair to Jack, Ianto's NAGGING him. He's doing that thing where you want to talk to somebody about something important, but you're too much of an uncommunicative spaz to broach the subject, so you quasi-casually bring the topic up every time the slightest opportunity presents itself, like when somebody says something or you see a vaguely similar situation on Eastenders or whatever, hoping the other person will get the gist that this is an important thing you want to talk about but don't want to say you want to talk about.
